Osaka’s Deep-Rooted Fugu Culture
Fugu has long been an important part of Osaka’s food culture. Although traditionally enjoyed mainly during the colder months, advances in aquaculture now make it possible to enjoy fugu dishes throughout the year.
Popular Fugu Dishes
Osaka offers a wide variety of fugu dishes. Well-known specialties include fugu sashimi (teccha), also known as tessa, thinly sliced fugu served as sashimi; fugu shirako, or pufferfish milt; fugu karaage, deep-fried fugu; and fugu-chiri (fugu hot pot or tecchiri), in which fugu is simmered with vegetables in a flavorful broth.
Another specialty is fugu-zaku, a dish made with fugu and other ingredients. These dishes showcase the delicate flavor and distinctive texture of fugu in different ways.
Winter Fugu Season
The traditional peak season for fugu is December through February. For visitors interested in experiencing Osaka’s distinctive food culture, winter is a particularly traditional time to encounter fugu cuisine.
