Osaka’s White Miso Style
Today, eating ozoni during the New Year is a tradition throughout Japan, but the ingredients and seasonings vary considerably by region and household.
In the Kansai region, particularly Osaka, white miso ozoni is a traditional favorite. It is characterized by the use of round mochi rice cakes and a rich white miso soup. Daikon and carrots are traditionally cut into round slices, reflecting a wish for a peaceful and harmonious year without conflict or division.
Traditional New Year Vegetables
During the New Year season, supermarkets in Osaka often display special vegetables for making ozoni, including ozoni daikon and Kintoki carrots.
Ozoni daikon is a small, slender variety of daikon that becomes a convenient size for serving in a bowl when sliced into rounds. Kintoki carrots are similarly slender and have been traditionally cultivated in Osaka. Their vivid color also makes them especially suitable for festive New Year’s dishes.
A Different Flavor on the Second Day
It is customary in some Osaka households to enjoy white miso ozoni on the first day of the New Year and change to a clear soup seasoned with soy sauce on the second day.
Osaka has long been known as a city of commerce and “akinai”, meaning business and trade. This change in flavor is sometimes playfully associated with the expression “akinai”, interpreted as “not getting tired of the same taste.”
How Shiro Miso Ozoni Is Prepared
To prepare Osaka-style ozoni, daikon, carrot, and peeled taro are first simmered in dashi stock. White miso is then dissolved into the soup, creating a smooth and gently sweet broth.
Round mochi rice cakes are added toward the end and lightly simmered until tender. The finished soup combines the creamy richness of white miso with the soft texture of mochi and the natural flavors of the vegetables.
